The Castaway is a modern Tiki Classic created by Beach Bum Berry, Here we re-interpret it into a non-alcoholic version by replacing rum with a lovely Pineapple Shrub and the Kahlua with Cold Brewed Coffee. The combination of pineapple and coffee works shockingly well to create a delicious and very complex sipping experience.

Ingredients

• 1 1/2 oz Brown Sugar Spiced Pineapple Shrub
• 3 oz of Pineapple Juice
• Vanilla Cold Brew Coffee with Almond Milk
• Orange Bitters (Optional)
• Pineapple Fronds for Garnish

Steps

• Fill a high-ball glass with ice
• Add Pineapple Juice, Shrub and Bitters (if using), and stir to combine
• Top drink with a float of cold brew coffee
• Garnish with Pineapple Fronds.
