The Mojito is a classic cocktail that doesn’t lean very heavily on the alcohol to give it dept of flavor. Here we use a little rum extract and make our syrup from brown sugar to add a bit more depth to the drink. But like any Mojito, we let the lime and mint be the true star.

Ingredients
- Juice of 1 lime (about 1/2 oz)
- Zest of 1 lime
- 1 1/2 oz brown sugar simple syrup (make it in the microwave)
- 6-8 stems of fresh mint
- club soda
Recipe
- Add 1 1/2 oz sugar syrup, lime zest, lime juice, and rum flavoring (if using) to a tall glass.
- aggressively muddle the ingredients together in the bottom of the glass.
- Fill the glass with ice.
- Add club soda most of the way to the top of the glass
- Stir the drink in the class, being sure to lift flavors from the bottom
- Top off with more club soda
- Garnish with a sprig of mint
